One chicken, four meals

A roast chicken is an essential item in my kitchen. They’re cheap, delicious and you can make several meals out of just one chicken.

A roast chicken became a regular item on my grocery list when I moved out of home. At my local chain grocery store you can buy a roast chicken for just $8 and for a girl on a budget doing grocery shopping for one I can’t pass up the convenience of having one in the fridge. Here are four ways I use roast chicken…

1. Traditional roast chicken dinner 

The first day I bring home a roast chicken I carve it up and serve it with some steamed vegetables and potato with gravy.     Usually I’ll only need a couple of slices of the chicken breast for this meal. Comfort food at its absolute best. I slice up the rest of the meat, keep some in the fridge and freeze some of it for use later on in the week.

2. Rice paper rolls 

One of my favourite healthy, easy lunches is a chicken and avocado rice paper roll. I use some store bought rice paper rolls, add vermicelli rice noodles, avocado, baby corn a bit of breast meat and whatever else I fancy. Sometimes I’ll fry up an omelette or add some grated carrot or snow peas. I’ll serve them with soy sauce or satay sauce. Delicious!

3. Burritos 

Burritos are such an easy and yummy meal. Just take some of the thigh meat you’ve already carved and put in the freezer and cook it up with a bit of seasoning. Add some guacamole, lettuce, cheese or whatever else you have in the fridge.

4. Pesto chicken pasta bake  

Using the remainder of the meat (usually a bit of breast meat and some drumsticks) I’ll cook up some pasta, stir in some pesto and the defrosted shredded chicken. Add a can of cream of celery soup, stir it through and add some grated cheese and breadcrumbs on top for some crunch. This is a great work lunch as well.
