Quick meals: chicken rice paper rolls

Rice paper rolls are so easy and quick to make, you’ll have dinner on the table in less than 15 minutes.

The great thing about rice paper rolls is they can cater to any taste. If you’re having friends over just set up a few bowls with different fillings and get rolling!

Here are some ideas for fillings: chicken, pork, beef, tofu, fish, avocado, carrot, cucumber, coriander, mango, cabbage, bean sprouts, snow peas, capsicum, baby corn, mint, basil, vermicelli noodles… the possibilities are endless!

First, you’ll want to assemble all of your ingredients so you can have a bit of a production line going. You can buy rice paper and rice noodles at most grocery shops. You can make the rice noodles by putting them in a bowl of boiling water, it’s that easy.

Rice paper rolls are a great way to use up whatever you’ve got in the fridge. I carved up a roast chicken and chopped up some veggies for a simple but yummy chicken, avocado, cucumber and carrot roll.

There are a few different ways to get your rice paper soft and ready to roll. If you’re in a group all making them together you might like to dip them in a bowl of hot water. I find running them under a tap with warm water is the easiest as they keep their shape a bit longer, making it easier to set them up on your bench or chopping board.

Once you’ve got your rice paper wet, work quickly. Lay out your rice paper on a chopping board or clean surface (pro tip: if you’ve got a group arranging them at a table just cover the entire surface in glad wrap). Put your filling towards the bottom of the roll, before folding the bottom up, then the sides in. Keep rolling until you’ve got a delicious little roll of goodness.

They’re so easy, and so delicious. Serve with whatever dipping sauce you like and give yourself a pat on the back for making something so healthy in such a short amount of time.
